No-Sugar-Added Carrot Cake Bread with Oatmeal

Box grate big carrots with a cheese grater. Reserve 2 cups of grated carrot.  

Pre-heat the oven to 350°F and line a 9" x 5" loaf pan with parchment.  

In a large bowl, combine eggs, applesauce, pure maple syrup, avocado oil, and vanilla extract.

Whisk the wet ingredients until fully blended.  

In the mixing bowl, add grated carrots, coconut, almonds, and raisins.  

Line the loaf pan with aluminum foil and pour the carrot cake batter.  

Pre-heat the oven and bake on the center rack for 50 minutes.
