A TikTok video published by the cooking school Milk Street Kitchen not long ago demonstrated that,
with a few exceptions, roasting carrots in butter yields better results than in oil alone.
The butter, according to Gill, is combined with olive oil before being drizzled over the root vegetables.
When combined, refined olive oil and butter have a little higher smoke point than butter alone, while extra-virgin olive oil does not.
This means that the combination is somewhat more heat resistant.
Here, a long, low roasting time for the carrots is the way to go. Avoid scorching the butter at all costs.
