Mix milk, egg, maple syrup, vanilla, cinnamon, baking powder
ginger, salt, and nutmeg in the dish.
Evenly sprinkle oats, raisins, carrots, coconut, and pecans over milk. Stir to coat.
Bake 45–50 minutes until the oatmeal is just set in the center and golden brown on top.
Let cool on a wire rack for 5 minutes before serving.
Add 1 tablespoon yogurt to each serving.
Cover and refrigerate for 4 days or freeze for 2 months. Divide and reheat as needed.
