WHAT TO DO BELOW Heat the oven to 225 degrees Fahrenheit. Wrap a sizable baking sheet in parchment paper.
In a stand mixer bowl, add the egg whites. For approximately two minutes,
with the wire whisk attachment, beat the eggs at a high
speed until they become frothy and little peaks begin to form.
Be careful not to stop the mixer while adding the sugar; it should be done in tablespoons.
If sugar gets on the sides of the bowl, don't stop the mixer to scrape it.
