While most cabbages have a harder crunch when uncooked,
delicate savoy cabbage has its own benefits.
It has a neutral flavor, the outer leaves are easy to remove for wrapped cabbage rolls,
and its less crispy texture makes it ideal for stir-frying.
The darker outer leaves of savoy cabbage are pebbled like lacinato kale.
Because they block the sun, the head's inner leaves remain
a bright yellow-green with a somewhat sweet, earthy flavor.
